Cathedral Pinot Noir hails from the ‘Cathedral’ vineyard which is in Upper Goulburn, two hours drive North of Bill main vineyards in Baw Baw Shire, Gippsland, Victoria. Bill has been working with this site for 3 years now, first making rosé until he understood the site better.
From dry grown, organically farmed 20 year old vines planted on deep, red volcanic soils, this wine is fermented and matured in a combination of stainless steel and old French oak. It’s complex in structure; enticing on the nose, lively on the palate and incredibly easy to drink.

“William Downie established his own label in 2003 after several years living and working in Burgundy.
His intention is to produce wines of purity and detail that reflect their place of origin. They are made in the most natural way possible, not pushed or shoved in any direction. They are not added to or subtracted from.
Although each of the William Downie wines is made from Pinot Noir, the Yarra Valley, Mornington Peninsula and Gippsland are more different than they are similar.”
