Hand harvested and completely de-stemmed, the wine was fermented and aged in the amphoras in contact with skins and lees.
The inside of the amphoras is coated with natural tree resin according to the ancient process used by the Romans 2000 years ago.
The wine has not been filtered or stabilized.

“Quinta do Montalto is a fully organic wine producer in the Lisboa region of Portugal.
The family domain consists of just 15.5 hectares of vines, on gently inclining forest surrounded slopes, shielded from the harmful influences of conventional agriculture and providing a unique micro climate.
The current proprietor and winemaker is fifth generation André Valério who has been in charge of viniculture and viticulture since 2005.
André is taking quite an experimental approach, and is now working with resin lined amphorae (know locally as Talhas) in tiny quantities of wine which instantly sell out, and also his Medieval blend blend of white and red – Medieval de Ourém (available now). He is also one the the very few Lisboa producers to work with Baga, a well know Portuguese variety but not normally grown in Lisboa.”
